Every few months we will feature a local chef and a dish that he/she favours. We will include some biographical information about the chef and probably pair some wines with the dish as well. The article will be in PDF format so you can download it and keep for your use.
This month we are pleased to feature Chef Justin Leboe from Waterloo House. Justin is a superb chef whose impact was felt as soon as he arrived on the island. He won the 2006 Bermuda Gold Award as the Best Chef in Bermuda. You are sure to enjoy the two recipes that Justin has offered for this article. The shortbread biscuits make an excellent appetizer with a glass of champagne or your favourite cocktail. The cappucino is simply brilliant with a glass of Sauvignon Blanc.
